Cornbread Taco Bake

Ingredients

• 1 box Krusteaz Honey Cornbread, prepared per package directions
• 1 lb ground beef
• 1 packet taco seasoning
• 1 can Mexicorn (drained)
• 1 can Rotel (drained)
• 2 cups of sour cream
• 3 cups Colby Jack cheese (divided)
• 1/2 cup green onions (chopped)
• Optional toppings: taco sauce, shredded lettuce, diced tomatoes, sliced olives, extra cheese

Instructions

1. Bake the cornbread: Prepare the cornbread according to the package instructions and bake it in a 9x13 pan.
2. Make the taco mixture: While the cornbread bakes, brown the ground beef in a large skillet. Drain if needed. Add the taco seasoning, Mexicorn, and Rotel, stirring until everything is well combined and heated through.
3. Layer it up: Once the cornbread is done, spread the meat mixture evenly over the top.
4. Mix the creamy layer: In a medium bowl, mix the sour cream, 1.5 cups of Colby Jack cheese, and green onions. Spread this mixture over the meat layer.
5. Add cheese + bake: Sprinkle the remaining 1.5 cups of cheese on top. Bake uncovered at 350°F for 20-25 minutes until bubbly and golden.
6. Let it rest: Allow the casserole to set for 10-15 minutes before slicing.
7. Serve: Add your favorite taco toppings and enjoy!
