Ingredients

Instructions

  1. Preheat oven to 375°F. Cook lasagna noodles according to package directions. Drain and rinse with cold water to stop the cooking and prevent sticking.
  2. In a large skillet, cook the sausage until browned and fully cooked, then drain the grease. Add diced onion and sauté until softened, for about 3 minutes. Stir in garlic, salt, pepper, and Italian seasoning and cook for another minute. Pour in marinara sauce, bring to a simmer, then remove from heat. Spread about 1/2 cup of the sauce on the bottom of a casserole dish.
  3. In a bowl, mix together ricotta, egg, parmesan cheese, 1 1/2 cups mozzarella, and parsley until well combined.
  4. Lay noodles flat on a baking sheet. Spread about 1/4 cup of the cheese mixture over each noodle, then add a strip of meat sauce down the center. Roll each noodle up and place seam-side down in the prepared dish.
  5. Pour remaining meat sauce over the roll ups and sprinkle with the remaining 1 1/2 cups mozzarella. Cover with foil (keep it from touching the cheese). Bake at 375°F for 40 minutes. Remove foil and broil for 2-3 minutes until the cheese is bubbly and lightly golden.
  6. Garnish with parsley and serve warm.
